Ankeny, Iowa, September 16, 2026— The Soyfoods Council announces the release of its latest free, downloadable miso recipe booklet. The Magic of Miso features dozens of recipes and tips for enhancing some of your favorite foods, along with hints for cooking with miso.
Miso’s health and nutrition benefits are only part of the story for this traditional fermented food. Miso has a long, flavorful history of adding savory umami notes to a variety of recipes. Umami is the fifth basic taste, joining sweet, sour, salty and bitter. Miso soybean paste is fermented with rice, barley or other grains. It contains probiotics, the gut-friendly, naturally occurring live beneficial bacteria found in fermented foods. Not only does miso adds flavor to your recipes, it providesapproximately 2 grams of protein per Tablespoon.
The Magic of Miso recipe booklet is co-authored by Linda Funk, Executive Director of The Soyfoods Council, food writer Gail Bellamy and graphic designer/artist Jana Strobel. Recipes are richly illustrated with food photography. The booklet is available on The Soyfoods Council website at www.thesoyfoodscouncil.com.
Some of the recipes are quick, two-ingredient condiments such as versatile Miso Butter and Apricot Miso Sauce. Miso Butter is made in a small microwave-safe bowl with 2 teaspoons red or white miso paste and 2-3 Tablespoons of butter. Microwave for 30 seconds, stir and drizzle over baked sweet potatoes, popcorn or cooked mushrooms. To enhance turkey, chicken and pork, make Apricot Miso Sauce by stirring 2 Tablespoons red miso into ¾ cups apricot preserves. Microwavefor 30 seconds. Stir and microwave for another 30 secondsbefore serving.
Other recipes range from sauces and dressings such Tofu Ranch Dressing, to miso-centric dishes like Miso Soup. Maximizes the flavor of meats and poultry with recipes for Braised Beef Flank Steak Marinade and Lemon Miso Sauce for Chicken. When serving a crowd, consider miso-enrichedfare including Western Tofu Black Bean Cheese Dip. The Magic of Miso recipe collection also provides a strong finish with craveable dessert ideas that combine the saltiness of miso with sweetness. Miso Caramel Sauce is an ideal topping for apple pie or chocolate cake, and a luxurious addition to after-dinner coffee drinks.
