Cranberry Apricot Oatmeal Soy Cookies
Makes 4 1/2 dozen cookies

1 cup butter
1 cup brown sugar
1/2 cup sugar
2 large eggs
1 cup flour
1/2 cup soy flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon almond extract
1/2 teaspoon salt
1 1/2 cup oatmeal
1 1/2 cups Texturized Soy Protein
1 cup chopped dried apricots
3/4 cup dried cranberries
3/4 cup sweetened flaked coconut
3/4 cup slivered toasted almonds


Preheat oven to 350 F.

In a large bowl, with mixer on medium speed, beat butter and sugars 2 minutes or until creamy, scraping bowl. Reduce speed to low, beat in next 7 ingredients, just until blended. Stir in remaining ingredients.

Drop by rounded tablespoons, 2 inches apart, on an ungreased cookie sheet.

Bake 14-15 minutes until tops of cookies are golden. Remove from pans onto cooling racks.

Yield: 4 1⁄2 dozen cookies
