Fresh Apple Bread

Moist, rich and spicy, this bread uses tofu, soymilk and soy flour.



1/4 cup soft soy margarine
1/2 cup packed light brown sugar
1/2 cup (4 ounces) soft tofu, drained and pureed
1/2 cup light vanilla soymilk
1 teaspoon vanilla
1 2/3 cup all-purpose flour
1/3 cup soy flour
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup shredded apple tossed with 1 tablespoon fresh lemon juice

Preheat oven to 350°. Spray 9x5-inch loaf pan with cooking spray.
In medium or large mixing bowl, cream margarine and sugar until light and fluffy, about 2 minutes. Add tofu, milk and vanilla and beat well. In small bowl, stir together flours, spices, baking soda and baking powder. Add dry ingredients to creamed mixture alternately with apple/lemon juice mixture, stirring just until moistened – do not overmix. Turn batter into prepared pan. Bake until top springs back when lightly touched, about 1 hour. Cool in pan on wire rack 10 minutes. Turn and let cool completely.
