Chocolate-Covered "Soy-Prize"

Edamame (pronounced ed-ah-MAH-may) are whole soybeans harvested when they’re still green and sweet.  They’re high in protein and fiber, and in 1999, the Food and Drug Administration announced that foods containing soy protein may reduce the risk of coronary heart disease.  Many grocery stores carry whole large edamame frozen in bags.  When working with chocolate, it’s important to purchase the good stuff.  Ideally, chocolate should contain at least 62% cocoa butter. Kids will love this making this great after school snack just as much as they’ll love eating it.  They won’t even know it’s healthy!

Makes 4 snack servings

You’ll need bamboo skewers for this recipe.

½ cup soynut butter
8 ounces high-quality semisweet chocolate, cut into small pieces or shaved
1 pound frozen shelled edamame, blanched and cooled

1. In a large saucepan heat 6 cups water to boiling. Add the edamame and cook 2 minutes.

2. Place a colander or strainer in the sink and carefully pour the edamame into it to drain.  Rinse very well with cold water to cool the edamame. Turn the edamame out onto paper towels to dry completely.

3. Set out a non-stick cookie sheet to hold the dipped edamame.

4. Create a double boiler as in the note below. Put the saucepan with water over medium heat so water is just simmering. Place one of the bowls over the water. Add the soynut butter and stir to melt.

5. Carefully lift out the bowl of soynut butter and set it aside. Cover with a clean towel to keep warm. (You may need to put it back over the simmering water for just a few minutes after melting the chocolate, so it will be warm enough for dipping.)

6. Put the chocolate into the second bowl and place over the pan of simmering water. Cook and stir to melt the chocolate.

7. Using a bamboo skewer as your tool, poke the tip of the skewer firmly into one edamame.  Dip the edamame in the warm soynut butter, and then dip into the chocolate. Place the coated edamame onto the cookie sheet to dry. Repeat the dipping with the remaining edamame.

*A double boiler is one pan that sits on top of another, with simmering water in the bottom pan to provide very low heat.  To make a double boiler, get out a large saucepan and then find a bowl, preferably metal, that just fits over the top.  You will need two bowls for this recipe:  one for the soynut butter and one for the chocolate.  The water in the pan should not quite touch the bottom of the bowl.
