Mixed Fruit Topped with Soy Ice Cream and Soy Granola

Perfect for a special dessert, or for brunch

Makes 6 servings

2 cups  apple juice
1 teaspoon ground cinnamon
2 ½ pounds frozen peaches
1 pound frozen blueberries
1 pound frozen strawberries

1. In large saucepan combine apple juice, ground cinnamon and peaches. Cook over medium low heat, stirring often, until peaches are soft.

2. Stir in frozen blueberries and strawberries. Continue to cook and stir until berries are soft.

3. Remove from heat and let cool.

Spoon Pump Mixed Fruit into individual dishes. Top with a scoop of Vanilla
Soy Ice Cream. Sprinkle with Soy Granola and enjoy!
