Grilled Chicken Soy Caesar Whole Wheat Wrap

Get the whole family in the kitchen to help with these great wraps.  The dressing is low in calories but high in protein, thanks to versatile tofu.  You’ll want to try it in place of mayonnaise in other salad dressings.  And, another time, you could use leftover rotisserie chicken for the filling.

Makes 6 wraps

Soy Caesar Dressing
10 to 12 ounces silken tofu
1 cup  water 1 tablespoon spicy brown mustard
1 tablespoon white vinegar
1 tablespoon lemon juice
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon salt
1/8 teaspoon black pepper

1. In colander under cold running water, rinse the tofu. Turn out onto a cutting board and cut into chunks.

2. Put tofu and all remaining ingredients into blender or food processor and blend until smooth.  Set aside.

Grilled Lemon Chicken
1/3 cup fresh lemon juice
1 cup water
1 large lemon, cut into 12 thin slices
1 tablespoon dried oregano leaves
6 (5- to 6-ounce) boneless skinless chicken breasts

1. In a large non-reactive bowl, stir together the lemon juice, water, lemon slices  and oregano.

2. Add the chicken breasts and turn them to coat with the marinate.  Cover bowl with plastic wrap and refrigerate for up to 6 hours.

3. Light the grill or preheat the broiler.

4. Lift the chicken from the marinade and hold over bowl for just a minute to let the marinade drip off.

5. Arrange the chicken breasts on the grill or broiler pan and cook for 5 to 7 minutes on each side or until cooked through.

6. Let cool briefly, then cut into small cubes.  Refrigerate if not using immediately

Wraps
2 tomatoes
6 whole wheat wraps (tortillas)
6 Romaine leaves
1/3 cup shredded soy parmesan cheese


1.  Cut stem from tomatoes.  On cutting board with sharp knife, cut into small chunks.

2.  In medium bowl stir together the chicken, tomatoes and all but about ½ cup of the Soy Caesar Dressing.

3. On cutting board or clean surface arrange the tortillas.

4.  On each tortilla spread some of the remaining Soy Caesar Dressing.

5.  Top each with a romaine leaf.

6.  Divide the chicken mixture among the tortillas.  Sprinkle with Parmesan cheese.

7.  Roll up.  Cut in half to serve.
